Ginger Orange Pork Tenderloin

Asian inspired flavors marinate this pork tenderloin. This easy to prepare marinade can be used for other meats as well.
Ingredients
  • ¼ cup of low-sodium soy sauce
  • ¼ cup of orange juice (fresh if possible)
  • 1 tbsp ground ginger or 3 tbsp freshly grated
  • *zest of 1 orange, divided in half
  • meat of choice: we used 2.3 pounds of organic pork tenderloin
  • *we highly recommend using organic fruits for zesting, as the peel holds the highest concentration of pesticides.
Instructions
  1. Place soy sauce, juice, ginger, half of the zest, and meat into a container or sealable ziploc bag
  2. Allow to marinate 2-6 hours (could be done in the morning for dinner that evening)
  3. Place contents, including marinade, into an oven safe baking dish,sprinkling on remaining orange zest.
  4. Grind some fresh pepper on top and roast at 375 until internal temperature reaches 145, this will vary based on thickness, but about 15-20 minutes. As an alternative, you can place on the grill. Pour remaining marinade in a pan and heat until boiling for 2 minutes.
  5. Let rest 10 minutes (internal temp will continue to increase)
  6. Slice on diagonal and pour pan juices on top of slices.
  7. Serve with a green salad and choice of starch (we love sweet potatoes)
