Oatmeal Banana Cookies (gluten free)

Oatmeal Banana Cookies: gluten free and no added sugar
Ingredients
  • (this recipe made 25 cookies, you can easily cut amount in half or double):
  • 2 cup of rolled oats (preferably organic)
  • 4 mashed bananas
  • 1 tsp cinnamon
  • *optional ingredients: ¼ cup of chopped nuts (we used almonds), ¼ cup dried fruit (we used naturally sweetened cranberries) or ¼ cup chocolate chips, can also flavor with different spices like ginger or cardamon
Instructions
  1. Mash bananas (we keep frozen ones on hand so that whenever we're craving these or a smoothie, we're ready to go)
  2. Mix in nuts, cinnamon, and any other optional ingredients you are using
  3. Bake at 350 for 15 minutes, until cookies hold their shape and are slightly browned around the edges
  4. Eat or freeze (they defrost quickly).
  5. *Suggestion: because these are moist, they can mold quickly.  Best to keep in refrigerator to store
Notes
Nutritional Information based on using ¼ c almonds & dried cranberries. This is also a great source of potassium: 64 mg in each cookie.
