Sauteed Brussels Sprout With Cranberries and Pistachios

- 1 tsp of olive oil
- 1 red pepper
- 2 pounds of brussels sprouts, ends cut off and chopped
- 1 whole orange (peeled and cut into ½" pieces) and its zest (we use organic oranges and wash the orange)
- ½ cup of shelled pistachios
- ¾ cups of craisins (naturally sweetened with juice-can be found in health food sections)
- salt/pepper
- Place craisins in a bowl and pour hot water over them (this allows craisins to plump up). Let sit for 5 minutes and drain
- Add oil to pan and saute peppers 1-2 minutes
- Add in brussels sprouts, zest and orange pieces and saute until bright green but not over cooked to maintain vitamin levels. About 3-5 minutes
- Turn off stove and mix in craisins and pistachios. Can be served hot or cold
