Carrots are awesome to eat raw on their own, but it’s fun to add them to some fruit for a filling and nutritious breakfast. Carrots are packed with Vitamin A, helping to enhance our vision & skin. Vitamin A is a powerful antioxidant that also helps to lower blood pressure, improve bone & dental health. While carrots have their own sweetness, we wanted to add some fruits that would provide a creamy, juicy texture to our smoothie. We had just gone strawberry picking, so it was only natural that they got tossed into the Vitamix. Then came some pineapple left over from the week, and why not a banana? Each one of these foods provides a different color, and therefore, different phytonutrients. Vitamin C in the strawberries, potassium in the banana, and pineapple has both Vitamin C and potassium.
This smoothie was great topped with our maple granola.
Makes 1 large smoothie
Ingredients:
- 2 smaller carrots (or 1 large)
- 1/2 cup pineapple
- 1/2 cup strawberries
- 1 frozen banana
- 1 tbsp flaxseed
- 5 ice cubes (or omit if your fruit was frozen and use water or almond milk to thin to desired consistency)
Instructions:
- Blend in Vitamix until smooth
- Pour into a glass and top with 1 tbsp of our Maple Granola, if desired
