Plant-Based Thanksgiving ideas for 2020: fill your plate with love and health
Well 2020 has certainly been a year! We are almost at 2021. Before we get there, let’s reflect upon the year we have gone through. Have there been good memories you can recall? Have there been moments you shared/things you accomplished that would not have happened if times had been different? For most of us there has been a mixture of loss and love. I have lost good friends. I have family I cannot see. Yet-through it all, there are things I am grateful for. May we harness those things. May we reflect upon them. There are things and people to fight for. Let’s give in ways we are able to those in need. Let us give thanks.
This year will be my first year hosting Thanksgiving in our house. It will be only the 4 of us, my husband, 2 kids, and yes-we got a COVID puppy, Ryder. I am used to a Thanksgiving of 40 people-filled with kids running around and lots and lots of food. While it’ll be small, I will make the traditional foods (minus the turkey). Below is what I plan on making:
Mashed Potatoes
Massaged Kale Salad-swapping the blueberries for apples and dried cranberries
I wish you all well. May we celebrate small, so that next year we can celebrate in full force. I for one, cannot wait for 2021.
In peace and gratitude.
