Baked Apples With Granola

February 9, 2014 By Garden Fresh Foodie

apple stuffed with nutty granolaLooking for a low calorie dessert? How about a stuffed apple with some delicious granola?! We used our Nutty Granola to stuff the centers (but any granola will work).  It’s as easy as pie, oh no wait…it’s easier!

Ingredients:

  • 6 apples
  • 2 cups of apple cider
  • 1/2 cup of nutty granola
  • 1-2 tbsp maple syrup (based on your taste and how much you want it to stick together)
  • 1 tsp cinnamon
  • cinnamon stick

Instructions:

  1. Preheat oven to 375
  2. Mix granola with cinnamon and maple syrupgranola mixed with maple syrup
  3. Core apples
  4. Place apples into a 9×12 baking dish and fill container with cider and cinnamon stick
  5. Bake covered (loosely) for 40 minutes (or until they can be pierced with a knife)
  6. Serve hot, topped with yogurt

Nutritional Benefits:

  • Low calorie
  • High fiber
  • Diabetic friendly dessert/low sugar
  • Gluten Free
  • Anti-inflammatory
  • Heart Healthy; very low in fat

Nutritional information will vary based on granola used
