Maple Apple Cobbler

Apple Cobbler Topped With Cocnut Whipped CreamApples, cinnamon, maple, & oats baking in the oven? Umm, yes please! This dessert is a total celebration of all the goodness of living in New York State! I used apples we picked from a low-spray farm we love, called Blackman Homested Farms, as well as local maple syrup.  We made this again recently and used buckwheat honey in place of the maple syrup-so flavorful, you MUST get some! I’m so glad to have help with harvesting local goodies!Apple Picking

Nothing makes your house smell better than when apples and cinnamon have been cooking happily. The warmth, the comfort is something that is so powerful it’ll create lasting memories for your family. Today I was on a total apple kick. Well, with 159 pounds of apples, you have to be, right?! Apple sauce, drying apples, and apple bread got made, so why not cobbler?! Apple Cart and Apple Tree

This recipe is vegan and low in fat & sugar, as compared to a traditional dessert. I used oats and oat flour for the topping, and maple syrup (but, as mentioned above, I also just made it with buckwheat honey-yumma!) for the sugar. The topping uses coconut oil, but you could swap out a plant-based margarine or grapeseed oil.  You could avoid using oil altogether if desired, and sub in apple cider to help bind the topping together. You topping won’t be as crumbly, but that’s ok, you’ll avoid oils/fats. Oats add tons of plant-based protein and fiber to this dessert. Apples are great sources of Vitamin C, which help in boosting your immunity and decreasing inflammation in your body. How can you not want to eat this?!Peeling Apples

Ingredients:

Filling:

  • 10-11 apples, peeled and cored, enough to fill a 9×13″ pan (we dipped our apples into a diluted orange juice mixture as we peeled to prevent browning, 1 part juice:4 parts water)
  • 2 heaping tsp of cinnamon
  • 1 tsp nutmeg
  • 3 tbsp maple syrup, honey (we use buckwheat-so far superior!), or liquid sweetener of choice
  • Zest of 1 orange
  • 1/2 cup apple cider or orange juiceApples For Cobbler

Topping:

  • 2 3/4 cups whole oats
  • 1 cup oat flour (can make this by grind whole oats in a blender, like a Vitamix
  • 5 tbsp coconut oil (enough to make it clump)
  • 2 tsp cinnamon
  • 3 tbsp maple syrup, or liquid sweetener of choice- we made this with buckwheat honey and OH MY! So Good! Add a little more if you need to make it clumpApple Cobbler Before Baking

Instructions:

  1. Preheat oven to 375 degrees
  2. Cut apples into slices, (dipping into an orange juice mix if desired, as you peel-1 part juice to 4 parts water) and measure out enough to fit into a 9×13″ pan
  3. Pour back into a large bowl, add remaining filling ingredients and mix well
  4. In a separate bowl, mix topping ingredients, using your hands to smoosh the oats and oil together. Place on top of filling, and press down
  5. Cover with foil and bake for 50 minutes, until bubbling. Remove foil and bake until top browns, about 10-15 more minutes.Bowls of Apple Cobbler
