Mango Salsa Salada

mango salad 2Mangoes and red peppers are packed with Vitamin C, an important antioxidant that helps to boost immunity and prevent disease.  Put them together and they create beautiful colors that will make everyone want to dive in and chow down.  The parsley and lime juice further enhance the Vitamin C levels and work to help reduce inflammation in the body.mangoes and red peppers

Nothing is faster to throw together and more impressive than this salad. Call it a salsa if you chop finely, or a salad for larger chunks. Either way, it’ll call everyone to the table!

Ingredients:

  • 1 cup of mango
  • 1 cup of red pepper
  • 1/4 cup of chopped parsley
  • juice of half a lime (or more, if you want it more limey)mango salad

Instructions:

  • Mix and that’s it!
  • Serve a top a salad, with tacos and red cabbage slaw, or on top of a veggie burgerslaw and mangoes Shrimp Tacos
