Dark Chocolate Truffles With Grand Marnier

Rolling Truffles In ToppingsI made these truffles to take to a friend’s house for a party. They’re so rich and silky, they melt in your mouth. Because they’re not made with any animal fats, they can melt quickly if left out for too long. I feel these are best straight from the freezer-or chilled on a plate/bowl over ice if for a party. These are the perfect Valentine’s Day treat, especially since they can be made ahead and frozen. They last well in the freezer for a long time, if you can stop yourself…..

This is a nice dessert to make with kiddos or for those who don’t like actual cooking. There a breeze to make! I rolled these in 3 different toppings, raw cacao powder, raw hemp seeds, and toasted coconut. They’d be great rolled in some pistachios or other chopped nuts of your choosing. When you roll them, try to handle them as little as possible. The heat from your hands will cause the truffles to melt. I used a melon baller, or a small ice cream scoop, and rolled them with damp hands. I had to wash my hands to cool them down a few times while making these, but it was worth it! This recipe makes a big batch, roughly 72-80 truffles depending on how big you make them.

I used 85% dark chocolate from Trader Joe’s to make these. Use high quality chocolate to ensure a superior product. Same goes true for what you finish the truffles off with. This recipe was adapted slightly from one from www.rouxbe.com-dairy-free chocolate truffles. Dark chocolate does have some health benefits linked to its make up of flavanoids. Flavanoids are antioxidants that have been shown to help lower blood pressure, improve memory, and improve blood flow. In it’s pure form, raw cacao, there are higher levels of these benefits. Because processed chocolate reduces its nutritional value, and is combined with added sugars, it’s not great to consume a lot of it. Normally I give you nutritional information, but, come on, you know these aren’t so good for you! So, do you really need to know? Just eat 1 or 2 at a time for a treat and enjoy and know you are getting some benefit of the hemp seeds, coconut, raw cacao, and dark chocolate.Chocolate Truffle Mise En Place

Makes between 72-80 small truffles

Ingredients:

  • 480 grams of high quality dark chocolate (85%)=4 & 4/5 bars from Trader Joe’s
  • 1 can of full fat coconut milk
  • 1 large shot of Grand Marnier (2 oz.)
  • pinch of good quality sea salt
  • truffle toppings: help seeds, cacao powder, crushed pistachios or peanutsChocolate Truffles Mise En Place

Instructions:

  1. Chop chocolate and place into a bowl.
  2. Bring coconut milk to a gentle boil, stir to prevent scorching.
  3. Pour milk over chocolate, add in liquor and salt, and stir until chocolate is meltedMixing Chocolate Truffles
  4. Place into the fridge to set, about 1 hour (or more)Chocolate Truffle Base
  5. Using a small melon baller or a small ice cream scoop, scoop into small sized truffles. With moistened hands, roll truffles into small rounds, roll into toppings and place onto a tray.   • Dark chocolate with 70-85% cocoa is a good source of fiber, manganese, copper, and iron. It can also contain a lot of fat and sugar, so choose your sources carefully and minimally processed
