Sauteed Brussels Sprout With Cranberries and Pistachios

Looking for a recipe that is jam packed with Vitamin C and beautiful? Here’s the perfect holiday side dish, that could even serve as a main lunch dish.  This recipe combines 4 foods very high in Vitamin C: brussels sprouts, oranges, peppers, and craisins (dried cranberries).  In the winter, we are prone to infection and sickness since we’re spending more time in close quarters with others.  Combine that with traveling and gatherings with people from other places, and you have a perfect recipe for needing to boost your immunity!

   Serves 10

   Ingredients:

  • 1 tsp of olive oil
  • 1 red pepper
  • 2 pounds of brussels sprouts, ends cut off and chopped
  • 1 whole orange (peeled and cut into 1/2″ pieces) and its zest (we use organic oranges and wash the orange)
  • 1/2 cup of shelled pistachios
  • 3/4 cups of craisins (naturally sweetened with juice-can be found in health food sections)
  • salt/pepper

Instructions:

  1. Place craisins in a  bowl and pour hot water over them (this allows craisins to plump up).  Let sit for 5 minutes and drain
  2. Add oil to pan and saute peppers 1-2 minutes
  3. Add in brussels sprouts, zest and orange pieces and saute until bright green but not over cooked to maintain vitamin levels.  About 3-5 minutes brussles sprouts in pan
  4. Turn off stove and mix in craisins and pistachios.  Can be served hot or cold
