Who doesn’t love Thanksgiving dinner? Making it however, is another story. It’s a lot of work! Here’s a way you can have a Thanksgiving style meal in 15 minutes, instead of hours. Add in the roasted squash (or sweet potato for quicker meal) with cranberries and you’ve got health on a plate! Serves 4: easy to double
Ingredients:
- 1.3 pounds of boneless, skinless chicken thighs or breasts (we use thighs because they are so much more tender and flavorful)
- 1 cup of Cranberry Sauce With Dried Cherries
- Freshly ground pepper
- Preheat oven to 375
- Place chicken in a oven safe pan and cover with cranberry sauce
- Roast for 15 minutes or until internal temperature reaches 160 degrees
- Serve with a salad and some roasted squash or baked sweet potato (skip the butter)-presto!
