Chicken With Cranberry Sauce & Dried Cherries

Who doesn’t love Thanksgiving dinner? Making it however, is another story.  It’s a lot of work! Here’s a way you can have a Thanksgiving style meal in 15 minutes, instead of hours.  Add in the roasted squash (or sweet potato for quicker meal) with cranberries and you’ve got health on a plate! If you didn’t freeze your extra cranberry sauce from Thanksgiving (by the way it freezes great!), make it in under 10 minutes using our Cranberry Sauce With Dried Cherry recipe(click the link)

Serves 4: easy to double

Ingredients:

  •  1.3 pounds of boneless, skinless chicken thighs or breasts (we use thighs because they are so much more tender and flavorful)
  • 1 cup of Cranberry Sauce With Dried Cherries
  • Freshly ground pepper
Instructions:
  1. Preheat oven to 375
  2. Place chicken in a oven safe pan and cover with cranberry sauce
  3. Roast for 15 minutes or until internal temperature reaches 160 degrees
  4. Serve with a salad and some roasted squash or baked sweet potato (skip the butter)-presto!
